CARROT CONFECTION: A WINTER MUST-HAVE DELIGHT

Winter is here and so are some great seasonal fruits and vegetables. One such vegetable is the super nutritious red carrot. Red carrots are packed with vitamins that boost the immune system and are great for heart health along with many other benefits. Amongst the many things you can make with it, one recipe that is truly tasty and popular is the carrot halwa or gaja ka halwa.
Though the recipe below can be made with regular carrots, it’s better to try it with red carrots for the enhanced flavour and authentic taste.
INGREDIENTS
4 cups grated red carrots
4 cups milk
4 tablespoons clarified butter or ghee
2 Cups sugar
1 teaspoon cardamom powder
10-12 each cashews, almonds and raisins
METHOD
1. Add ghee to a pan and fry the dry fruits. Take out and keep aside
2. In same pan with remaining ghee add milk and carrots
3. Bring to a boil on medium flame then reduce to simmer
4. Keep on low flame while stirring occasionally
5. The milk will begin to reduce and the carrots will get cooked as well
6. Once the milk in reduced to more than half add in sugar and cardamom powder
7. Mix and cook on low flame till all milk is evaporated.
8. Add in the dry fruits last, cook for few minutes
TIP:
ou can also add a little khoya for a rich flavour after adding the dry fruits.
