Ingredients (1–2 servings)
• 2–3 eggs (boiled or poached)
• ½ cup Greek yogurt
• 2 garlic cloves (minced)
• Salt & black pepper to taste
• Fresh coriander (chopped)
• 2 tbsp butter
• 1 tsp chilli flakes
• ½ tsp paprika (Kashmiri lal mirch works well or Aleppo pepper if you have it)
• A few strands of pickled onion
• Crusty sourdough bread (for serving)
Method
1. Boil your eggs with half a teaspoon salt in the water (or poach them if you prefer).
2. In a bowl, mix Greek yogurt with minced garlic, salt, pepper, and coriander. Keep aside.
3. In a pan, melt butter and stir in chilli flakes and paprika for a smoky chilli butter.
4. Toast your sourdough until golden and crunchy.
5. To assemble: spread a bed of yogurt on a plate, place halved eggs on top, drizzle with chilli butter, add pickled onion strands, and finish with coriander.
