A quick Mango Fraisier recipe by Parisian Cafe. A tropical twist on the classic French strawberry cake, a mango fraisier features layers of airy sponge, lush diplomat cream, and sweet, juicy mangoes.

Ingredients
Moist vanilla sponge
Pastry cream
Whipping cream
Mangoes
Mango syrup for soaking
Method
First, we will make diplomat cream. Make the pastry cream smooth with the help of wire whisk. On the side whip the whipping cream till medium peak. Now fold the smooth pastry cream into whipped cream and make a smooth diplomat cream.
Now, take a 3-inch ring, line it with plastic wrap or acetate sheet. Do not cover the bottom of the ring.
Cut and place the vanilla sponge in the bottom of the ring. Now, soak the sponge a little with homemade mango syrup.
Now, place the sliced mangoes around the sides of the ring, and mango slices have to overlap on each other.
Pipe the diplomat cream in-between mango slices and top of the ring. Now, fill inside with chopped mangoes.
Now cover it with diplomat cream and make it flat. Place the second vanilla sponge and soak it nicely with the same mango syrup. On top of it, pipe some diplomat cream and make it flat again.
Now, with the help of a nozzle, pipe the cream and make some design, and the centre part has to be empty. Now fill it with chopped mangoes, garnish it with blanched pistachio.
Served chill.
Tips
1. Vanilla sponge has to be moist.
2. Soak the sponge very well to melt in mouth effect.
3. Mango has to be firm, not mushy. We recommend Alphonso mango.
4. Always use acetate sheet or plastic wrap for lining the fraisier.
